A grilled cheese sandwich has a pretty short list of required ingredients. But that just leaves more room for pubs, diners and trendy bistros to add their own special ingredients that make guests melt. Here are a few favorites.

Although the grilled cheese and tomato sandwich at the former Baxter’s Eatery & Saloon isn’t on the written menu, it’s requested enough that it’s still in the computer system. With two types of cheese – cheddar and Swiss – and vine-ripe tomatoes on grilled sourdough bread, it’s not hard to see why this sandwich is hard to forget. $5.99, with fries.
